COCONUT & CURRY LEAVES CHUTNEY - by AroundTheKitchen





INGREDIENTS

  1. COCONUT                                                 - 1 cup
  2. GREEN CHILLI                                         - 2
  3. GARLIC                                                     - 3
  4. GINGER                                                     - 1/2
  5. CURRY LEAVES                                       - 12/14
  6. RED CHILLI                                              - 2
  7. SALT                                                           - 1 tsp
  8. SUGAR                                                       - 1 tsp
  9. MUSTARD SEEDS                                    - 1 tsp
  10. SPLIT BLACK GRAM/URAD DAL         -  1 tsp


METHOD:
  • in a mixer, add COCONUT
  • add 2 GREEN CHILLI or more according to your taste
  • add 3 GARLIC
  • add 1/2 GINGER
  • add 1 tsp SALT
  • add 12/14 CURRY LEAVES
  • add 1/2  tsp SUGAR
  • GRIND UNTIL COMBINED WELL TOGETHER
FOR TEMPERING:
  • heat 1 tbsp OIL
  • add 1 tsp MUSTARD SEEDS
  • let it splutter
  • add 3 GARLIC
  • let it turn into light golden brown colour
  • add 2 RED CHILLI
  • add URAD DAL
  • add CURRY LEAVES
  • stir and let it fry
  • add hot over the chutney
  • CHUTNEY IS READY TO SERVE
