Sambar (Dudhi and Moong sambar - by AroundTheKitchen




INGREDIENTS:

  1. Bottle Gourd/लोकी                                                 -    1
  2. Whole Green Moong/मूंग                                       -    1/2 CUP
  3. TOMATO/टमाटर                                                   -    1 BIG
  4. ONION/प्याज                                                           -   1 BIG
  5. WATER/पानी
  6. COCONUT/नारियल                                                -   1/2 CUP
  7. CORIANDER SEEDS/धनिया                                -    3 TSP
  8. CUMIN/JEERA/जीरा                                             -    1 TSP
  9. MUSTARD SEEDS/RAI/राइ                                 -    1/4th TSP
  10. FENUGREEK/METHI SEEDS/मेथी दाने               -    1/4th TSP
  11. GARLIC/लसुन                                                        -    3/4
  12. RED CHILLIES/लाल मिर्च                                       -   5/6
  13. TURMERIC/हल्दी                                                   -   1/2




METHOD:


(A) STEP 1: COOK VEGETABLES

  1. cook MOONG for 1 whistle in cooker.
  2. after the moong is cooked, add chopped TOMATO, ONION AND chopped BOTTLE GUARD .
  3. add SALT according to taste,
  4. add TURMERIC POWDER
  5. close the cooker and cook for another 1 whistle,



(B) STEP 2: MASALA PASTE

  1. grind  : COCONUT, CORIANDER SEEDS,CUMIN, MUSTARD SEEDS, METHI SEEDS, GARLIC, DRY RED CHILLIES, TURMERIC and make a fine paste of the masala,


(C) STEP 3: SAMBAR
  1. after the vegetables are cooked after 1 whistle in the cooker, open the cooker lid, 
  2. transfer the boiled vegetables in a different container,
  3. add the MASALA PASTE,
  4. add 1/2 cup WATER
  5. and mix well,
  6. ADD SALT
  7. add more water according to your desired consistency
  8. add TAMARIND WATER/PASTE and finally 
  9. add ASOFOETIDA/HING and mix well.


(D) STEP 4 : TEMPERING
  1. heat 1 tbsp oil
  2. add 1 tsp mustard seeds,
  3. add garlic (4/5)
  4. add red chilli (1/2)
  5. add curry leaves (7/8)
POUR OVER THE HOT TEMPERING ON THE SAMBAR & CLOSE THE LID.
OUR SAMBAR IS READY TO SERVE.
