KACHORI - CHANNA DAL KACHORI




INGREDIENTS:


  • FOR DOUGH:


  1. MAIDA/ALL PURPOSE FLOUR - 2 CUPS
  2. RAVA/SEMOLINA - 2 TBSP
  3. SALT- 1/2 TSP
  4. OIL - 1 TBSP
  5. WATER - AS PER REQUIRED TO KNEAD THE DOUGH
  • FOR STUFFING:
  1. CORIANDER POWDER/धनिया पाउडर
  2. CUMIN/JEERA POWDER/जीरा पाउडर
  3. RED CHIILI/लाल मिर्च पाउडर
  4. FENNEL POWDER/सौंफ पाउडर
  5. AMCHUR POWDER/आमचूर पाउडर
  6. GARAM MASALA/गरम मसाला
  7. BLACK PEPPER/काली मिर्च
  8. SALT/नमक
  9. JAGGERY SYRUP/गुड़


METHOD:

  1. To make the dough, add 2 cups of maida in a container,
  2. add 2 tbsp of rava, rava makes the kachori crispy,
  3. add 1/2 tsp salt and 1 tbsp of oil to the flour
  4. now, add water accordingly to knead the dough
  5. the dough should be stiff and not soft
  6. once the dough is kneaded, apply some oil on the dough
  7. cover the dough for 15 mins and leave it aside


  1. To make the stuffing,
  2. take 1 cup of channa dal, soak the dal for 15/20 mins
  3. drain the excess water after soaking and
  4. boil the dal for 2 mins on high flame,
  5. now, grind the dal in a blender coarsely
  6. once the dal is coarsely grinded, add the masala
  7. for masala add 1 tsp of coriander, cumin,fennel, garam masala, red chilli, amchur powder, black pepper, salt (each masala 1 tsp), and 2 tbsp of jaggery syrup/sugar,
  8. masala is ready for stuffing,

  1. To make kachori, take small portion from the dough, 
  2. fill 2 tbsp of the stuffing into the dough ball
  3. roll and flatten the dough balls 
  4. heat oil in a Pan/Kadai
  5. Once the oil is hot enough, fry the kachori until golden brown on both the sides on medium flame
  6. once the kachori is golden brown on both the sides, remove it on a tissue and drain the excess oil
  7. OUR KACHORI IS READY TO SERVE
