Nariyal Vadi / Naralachi Vadi / Cococnut Barfi




• Freshly grated  coconut – 3 cups 
• Green cardamom – 5 to 6
• Sugar –1 & 1/2 cups
• Pinch of salt
• Clarified butter / ghee – 1 tsp


Method:

In a mixer, add freshly grated coconut and cardamom. Blend them to a fine mixture.


1. Heat a teaspoon full of ghee in a pan. Add fresh grated coconut & cardamom mixture.

2. Add sugar & mix. 

3. Slowly cook this mixture in a very slow to medium flame till the sugar dissolves in the mixture. 

4. Add a pinch of salt 7 mix.

After about 10 to 15 minutes of cooking when the mixture is slightly getting solidified i.e. forming dough like consistency, the mixture is ready.

5. Pour this mixture in a parchment lined tray/  greased plate and spread evenly.

5. Keep aside and allow to cool for 1 to 2 hours.

Cut them into desired shapes and Nariyal Vadi is ready to be served.
