Water - 1 cup
Cashew - as desired
Cardamom powder - 1 pinch.

METHOD:
  • In a saucepan or kadai take 1/2 cup sugar and 1 cup water.
  • Stir & boil till the sugar is completely dissolved. There is no need to get thread consistency sugar syrup. Keep this aside.
  • In another kadai heat 1/2 cup ghee.
  • To it add in 1/2 cup wheat flour and mix well without forming any lumps.
  • Roast on low to medium flame stirring continuously for 15 mins.
  • After 15, the mixture will starts to turn golden in colour and you will smell the aroma of roasted wheat flour.
  • Continue to stir for 5 more minutes. This will ensure that the mixture does not burn.
  • Now i.e after 20 minutes, the mixture will turn dark golden brown in colour which means that the wheat flour has cooked completely.
  • Pour the sugar syrup over wheat mixture stirring continuously. Be careful as the mixture splutters.
  • Keep stirring the mixture continuously, till the wheat flour absorbs all the sugar syrup.
  • Continue to cook and stir for 5 minutes stirring continuously to ensure that the mixture does not form any lumps.
  • Cook till the halwa releases ghee from sides.
  • Now add ¼ tsp cardamom powder and roasted cashew nuts and mix well.
