AATE KA HALWA
INGREDIENTS:
Wheat Flour - 1/2 cup
Ghee - 1/2 cup
Sugar - 1/2 cup
Water - 1 cup
Cashew - as desired
Cardamom powder - 1 pinch.
METHOD:
- In a saucepan or kadai take 1/2 cup sugar and 1 cup water.
- Stir & boil till the sugar is completely dissolved. There is no need to get thread consistency sugar syrup. Keep this aside.
- In another kadai heat 1/2 cup ghee.
- To it add in 1/2 cup wheat flour and mix well without forming any lumps.
- Roast on low to medium flame stirring continuously for 15 mins.
- After 15, the mixture will starts to turn golden in colour and you will smell the aroma of roasted wheat flour.
- Continue to stir for 5 more minutes. This will ensure that the mixture does not burn.
- Now i.e after 20 minutes, the mixture will turn dark golden brown in colour which means that the wheat flour has cooked completely.
- Pour the sugar syrup over wheat mixture stirring continuously. Be careful as the mixture splutters.
- Keep stirring the mixture continuously, till the wheat flour absorbs all the sugar syrup.
- Continue to cook and stir for 5 minutes stirring continuously to ensure that the mixture does not form any lumps.
- Cook till the halwa releases ghee from sides.
- Now add ¼ tsp cardamom powder and roasted cashew nuts and mix well.
The atte ka halwa is now ready to be served.
