Cococnut Barfi - Nariyal Vadi - Naralachi Vadi

Nariyal Vadi / Naralachi Vadi / Cococnut Barfi • Freshly grated  coconut – 3 cups  • Green cardamom – 5 to 6 • Sugar –1 & 1/2 cups • Pinch of salt • Clarified butter / ghee – 1 tsp Method: In a mixer, add freshly grated coconut and cardamom. Blend them to a fine mixture. 1. Heat a teaspoon full of ghee in a pan. Add fresh grated coconut & cardamom mixture. 2. Add sugar & mix.  3. Slowly cook this mixture in a very slow to medium flame till the sugar dissolves in the mixture.  4. Add a pinch of salt 7 mix. After about 10 to 15 minutes of cooking when the mixture is slightly getting solidified i.e. forming dough like consistency, the mixture is ready. 5. Pour this mixture in a parchment lined tray/  greased plate and spread evenly. 5. Keep aside and allow to cool for 1 to 2 hours. Cut them into desired shapes and Nariyal Vadi is ready to be served.

Rava Dosa - instant rava dosa recipe for breakfast

INGREDIENTS:  rava/रवा दोसा - 1 cup rice flour/चावल का आटा - 2 tbsp salt/नमक - 1/2 tsp green chilli/हरी मिर्च - 1 (as required) black pepper/काली मिर्च - pinch/as required ginger/अद्रक - 1 tsp chopped cumin/जीरा - 1 tsp cashew/काजू - as required water/पानी - 3 cups. METHOD: 1.   in a bowl, add 1 cup of rava & 2 tbsp of rice flour 2. add salt, green chilli, black pepper, ginger, cumin and cashew, 3. add 3 cups of water and mix well to make a batter, 4. for 1 cup of rava the water will be 3 cups, 5. heat the tawa and apply oil/ghee to grease the tawa, 6. once the tawa is heated, take spoonful of batter and pour it on the tawa, 7. remember - mix the batter well before pouring on the tawa so that the rava does not settles down in the bowl, 8. cook for 2/3 mins, 9. when the dosa is half cooked, sprinkle some oil/ghee. 10. when the dosa turns light brown in the centre the dosa is ready to serve.
